Ingredients
- 4 oranges
- 2 onions
- 100 g bacon
- 20 g pine nuts
- extra virgin olive oil to taste
- mustard to taste
- iodised extra fine salt Cuor di Mare
- pepper, thyme (pomegranate grains) to taste
Method
- Fillet an orange and cut the onions into thin slices.
- Juice the second orange and emulsify the juice with salt, pepper, mustard, thyme and extra virgin olive oil to make a thick sauce.
- Sauté the bacon until crisp.
- Remove the orange fillets from the marinade and add them to the onions.
- Add pine nuts and finish with bacon.
Try to add bread croutons!
