Small Taralli

  • 250 g flour 00
  • fine iodised salt Cuor di Mare to taste
  • white wine, half a glass
  • Half a glass of olive oil


  1. Mix flour, oil and wine and add a handful of fine salt.
  2. Knead until the dough is smooth.
  3. Slice small pieces of the dough and roll them out to into a rope.
  4. Join the two ends of the rope to shape a small doughnut.
  5. Bring water to a boil in a pot and add the taralli a few at a time.
  6. Once they float, scoop them out with a slotted spoon and place on a clean tea towel.
  7. Then sprinkle the taralli with unrefined coarse salt and arrange them on a tray, and bake at 200° for 20 minutes.
  8. Let cool before serving.
